In the last 15+ years of business, Russell’s has become the local destination for homestyle cooking and baking, but one thing on the menu has been a standout favorite from the beginning: our Gooey Butter. Ours is different from the traditional St. Louis staple. Russell’s Gooey Butter combines the classic rich and gooey cream cheese-based filling with our addition of a buttery, salted shortbread crust. The crust adds texture and provides a balance of salty and sweet to make our gooey butter so special. Made with care by our talented team of bakers, it’s safe to say that we’ve perfected St. Louis’ iconic dessert - it’s Gooey Butter, but better.
Russell’s Gooey Butter is a handmade, ready-to-serve dessert, showcasing our family recipe for the signature dessert. We recommend a light dusting of powdered sugar for the traditional gooey butter finish before serving.
Gooey Butter’s Historic Roots
Our signature Gooey Butter differs from the traditional St. Louis staple. Gooey butter cake is said to have originated in the 1930s from a ‘happy accident’ when a St. Louis baker added too much butter to a coffee cake recipe. The ‘accident’ cakes sold so well, other local bakers picked up on the recipe, and the rest is Gooey Butter history.
About Chef Russell Ping
Chef/Owner Russell Ping is a self-taught baker and chef, elevating nostalgic takes on classic dishes. At just 22 years old, Chef Russell Ping opened the flagship Russell’s location in Fenton, MO in 2006, with his mother, Kate Ping. They wanted to create a concept with a focus on family, featuring approachable American fare, utilizing local and quality ingredients, in a casual, warm, inviting environment. For the first few years, Russell would start baking at 3 a.m. and cook everything from scratch with just one convection oven and a two burner electric stovetop. With only three to five employees, the Pings were charged with delivering the food and hospitality that they knew would set them apart. The hustle paid off, and now Ping operates Russell’s in Fenton and Russell’s on Macklind as well as an online gooey butter shipping business with more projects in the works. Each Russell’s location cares deeply about their guests and caters to their community’s needs. He hopes Russell’s Gooey Butter will evoke fond memories for all to enjoy!
